Would I be able to substitute the coconut milk for soy milk?
Generally we don’t recommend soy milk, as non-fermented soy products pose a host of health dangers.
You could substitute the coconut milk to coconut water or almond milk. Soy milk or traditional milk would also work, we just didn’t mention them because they aren’t the “healthiest” options.
